Now I love me some black-eyes peas and this was right up my alley. Sorry to say that I don't have any pictures to go with this blog entry (boring, I know!) but trust and beleive it was a tasty treat!
What you need:
1/2 tsp salt
1 garlic clove
1/4 cup rice wine vinegar
2 tbsp olive oil
1 tsp cumin
2 large tomatos, chopped
2 tbsp fresh cilantro, chopped
1 15oz can black-eyes peas, drained
1 jalapeno pepper, chopped (optional)
1 bad of Tostitos Scoops
1. Combine salt and garlic in a medium bowl; mash together.
2. Add rice wine vinegar, olive oil and cumin, mixing well.
3. Add tomatos, cilantro, black-eyes peas and jalapeno pepper; toss well.
4. Serve with Scoops and Enjoy!
