One More Thing....

There were two Picasso's in the house! The kids took their time laying out paper over the small table and were very eager to get started with their original works. Paint colors were mulled over and brushes were chosen quickly. Here are a few snapshots!






Cinnamon Tostada


  • 2 (10-inch) whole-wheat tortillas
  • 1 tablespoon light-brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 teaspoons butter, melted

 

  1. Place tortillas on a baking sheet. In a small bowl, combine sugar and cinnamon. Dividing evenly, spread butter on one side of each tortilla; sprinkle with cinnamon sugar.
  2. Broil until sugar is golden brown and has melted, 1 to 2 minutes. (Tortillas will puff under broiler and become flat again once taken out.)
  3. Cut each tortilla into wedges.

So I tried my hand at making some cinnamon tostadas from memory. My first run was meh...crunchy, dry and the brown sugar just sat on top clumped like dust bunnies. Sooooooo, I ditched those and tried again. Hey, when a 5 year old refuses a sweet treat something has gone terribly wrong!

Take 2! I found my recipe and decided to follow the directions. I was, however, liberal with the cinnamon, brown sugar and butter. :-) I made four tostadas and POOF! they disappeared rather quickly. Yeah for second chances!!

Seasoned whiting fish, yellow rice and green beans


Yeah!!! My first foodie photo! I want to thank Canon for providing me an affordable camera that is willing to work with me and not crash and burn like my coughHPcough camera. Anyway, my handsome man picked up these whiting fillets which I drizzled some GOYA olive oil and tossed in a bowl. Then I lightly seasoned both sides with some 'green cap' GOYA, McCormicks Grillmates Montreal Steak and Grillmates Chicken and cumin. I baked at 350. GOYA makes a wonderful and easy to prepare box rice and so I used their yellow rice for this dinner. Green beans I sauteed in butter and wait for it....GOYA vegetable seasoning! Do you get a feel of a theme here? I can't be on the island so I bring a little bit of it to my table. !WEPA!

I did it!

So here I am posting to my first blog for the first time!! I'm not sure what to do or where to take this but I will go with what my heart and tummy tell me.

Who would have thought that I would end up in the kitchen and actually like to cook?? HAH! Certainly not me!!! But...it has grown on me. I mean, really, how much junk food and frozen dinners can a chic like?? So I've learned my way around 'that' room and have begun to enjoy my so-called masterpieces. :-)

My intent is to post the recipes and pix of what I've made including any and all burnt creations. Gotta keep it real people! LOL I'm shooting for at least two posts per week. Looking forward to my new endeavor and I hope you all join me and enjoy the ride!!
